Summer will be gone before we know it! Enjoy the heat and freshen up with these refreshing Melon Drinks. These recipes are sure to cool you off on even the most oppressive of summer days. Whether you're hosting a cocktail party or relaxing by the pool, it's the perfect occasion to try a fun and refreshing cocktail recipe.

Cucumber Melon Martini

Yield: 1 martini

  • 1 oz high-quality gin
  • 1 oz melon liqueur, such as Midori
  • 3 slices fresh cucumber
  • 4 1-oz balls honeydew melon

  1. Add 1 melon ball and 2 cucumber slices to a mixing glass and muddle well.
  2. Add to a shaker, along with the gin and melon liqueur. Fill with ice and shake well.
  3. Strain into a martini glass. Garnish with remaining melon balls and cucumber slice.

Ingredients:

  • Flesh of 1 ripe watermelon, cubed
  • 1/2 C blue agave tequila
  • 1/3 C lime juice (from 2-3 large limes)
  • agave nectar, to taste
  • lime wedges, for garnish

Directions

  1. Line a large baking sheet with parchment paper. Place the watermelon cubes on the sheet and spread into a single layer. Freeze for several hours or until well frozen.
  2. When you are ready to serve the drinks, simply pull the watermelon cubes out of the freezer and add to a blender with the rest of the ingredients. Sweeten with agave nectar to taste, starting out with just a little. The amount you need will depend on how ripe/sweet your melon is.
  3. Serve in frosted glasses, rimmed with coarse salt if desired. Garnish with a lime wedge for color.

Minted Honeydew Bellini

Simple homemade sorbet makes this Bellini easy and refreshing.

For the Sorbet:

  • 1 honeydew melon, peeled and cubed
  • 1/2 C melon liqueur, such as Midori
  • 2 T honey or agave nectar
  • 1/2 C ice cubes
  • handful of fresh mint leaves, plus several sprigs for garnish

To Serve:

1 bottle champagne of choice

Directions

  1. Place all ingredients in a blender or food processor and blend to combine. Be sure no large ice chunks remain.
  2. Scoop the mixture into a freezer-safe container and freeze for at least 1 hour.
  3. To serve, scoop the sorbet into chilled champagne flutes. Top with champagne, pouring slowly and carefully to avoid excess fizzing. Garnish with mint sprigs. Enjoy!
