We keep hearing that breakfast is the most important meal of the day. But with everything that you have to get done in the day, it can be difficult to be inspired when throwing together a breakfast. If you're struggling to find that bowl of cereal or egg sandwich appealing at way-too-early-in-the-morning, then try out our vegetable scrambled eggs recipe.
The recipe can easily be doubled or tripled if necessary, just remember to use a very large pan, so that the egg doesn't get too deep. Otherwise, it may cook unevenly. Larger batches may also take longer.
Vegetable Scrambled Eggs
Makes 2 servings
- 1 Tablespoon butter
- 6 eggs
- 4 Tablespoons milk
- 1/4 teaspoon cracked pepper
- 1/4 teaspoon salt
- 1/4 cup sweet onion chopped
- 1/4 cup green pepper
- 1/4 cup mushroom slices
- 1/4 cup diced tomato
- 1 diced jalepeno, thai, or serrano pepper (optional)
- 1 Tablespoon real bacon crumbles or bits (optional)
- 1/4 cup sharp cheddar cheese
- In a small bowl combine your eggs, milk, salt, and pepper. Beat until frothy.
- In a large frying pan over medium heat, melt your butter. Once it is hot, add your onions, mushrooms, peppers, and bacon bits. Allow to cook until the onions turn translucent. There should be a little water in the bottom of the pan from the cooking vegetables. This is what you are going to use to make sure your eggs steam into fluffy clouds.
- Spread the vegetables out in a even layer and pour the egg mixture over. If the pan looks dry, add another tablespoon or two of water and make sure it is hot and bubbly before adding your egg mixture.
- Cover the pan with a lid, or sheet of foil and allow the eggs to steam for approximately 2-3 minutes, checking the bottom occasionally to ensure it is not burning. Once the eggs appear to have fluffed up a bit, flip the egg in sections, so that raw side is down, and then recover.
- Allow to cook for another 2-3 minutes, and then stir to ensure all the egg is cooked.
- Serve immediately with an English muffin or piece of toast.
- Sprinkle the cheese over the top of the eggs just before serving.
