Christmas is just around the corner and it'll be here before you know it. You’re planning to serve your much-loved ham dinner to your family just as you do every year. After all, what’s more traditional for a Christmas dinner than a ham? But maybe you want to do something a bit different with your ham this year. Well, this Southwestern pork recipe has an unequaled flavor and is definitely the one to try! This Chipotle-Pineapple Glazed Ham that serves eight people is full of a smoky, powerful flavor that everyone’s sure to love.

Ingredients:

  • 1 smoked, sliced 5-7 lb. ham
  • 2 or 3 seeded chipotle chiles in adobo sauce
  • 1 10 oz. can of undrained crushed pineapple
  • 1 c. well-packed brown sugar
  • 1 or 2 tbsp. of adobo sauce (from the chipotle can)
  • ¼ tsp. of ground ginger
  • ¼ tsp. of nutmeg
  • 2 tbsp. of cold water
  • 2 tbsp. of cornstarch

Directions:

  1. You’ll need to preheat your oven to 375? F.
  2. With the cut end facing downward, lay the ham in a big baking dish. Next, if your ham isn’t already scored, you’ll want use a sharp knife to gently cut the skin of the ham in a diamond-shaped plaid. First cut diagonally one way, then the other way—this will create your diamond-shaped pattern you’re looking for. Be careful not to cut through to the meat though—cut only the skin. Put the dish into the preheated oven and bake the ham for 15 minutes.
  3. Prepare the glaze while your ham is cooking. In a blender mix together the chipotle chiles, pineapple, brown sugar, adobo sauce, ginger and nutmeg. Blend until the mixture is smooth. Pour this creamy mixture into a saucepan and once it boils, turn it down to simmer. Do not cover the sauce.
  4. In a small cup, blend the water and cornstarch until the cornstarch dissolves; then whip it into simmering mixture in the saucepan. Simmer the mixture until it thickens to become a glaze.
  5. When the ham has cooked for 15 minutes, brush the glaze onto the ham.
  6. Cook the ham for another hour, brushing it with the glaze every 15 minutes. Your ham’s internal temperature must be at least 140? F before taking it out of the oven. Any left-over glaze can be served on the side as a dipping sauce.

The great thing about this recipe is its flexibility. If your guests don’t care for the heat or you’re going to be serving children, you can remove the seeds from the peppers. You’ll still get the robust flavor but only mild heat. Leave some of the seeds in the chipotle chiles if you want moderate heat. However, if you want to really turn up the heat, leave all of the seeds in the peppers. No matter what you choose for a level of heat, your guests will be begging you to cook this for your Christmas dinner year after year.
