We're changing things up a bit and taking things to the oven with our recipe featuring cilantro today.  These biscuits feature big pockets of sharp cheddar, and are best baked on a piece of parchment paper or a baking mat, to keep them from sticking to your pan.  The recipe makes 12 smaller biscuits or 8 larger biscuits.  If you have difficulty with the cheese in the recipe melting too quickly in the oven, you can freeze the cubes for about 30 minutes before adding them to the recipe.

Makes 8 - 12 portions.

Ingredients:

  • 2 Cups pastry flour (you can also use all purpose)
  • 2 Tablespoons sugar
  • 1 Tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup melted butter
  • 2/3 cup
  • 4 ounces of sharp cheddar cheese cut into approximately 1/4" cubes
  • 1 teaspoon cracked pepper
  • 2 tablespoons fresh cilantro, diced fine'

Directions:

  1. Preheat the oven to 450 degrees, and line your baking sheet with the parchment paper or baking mat.
  2. In a large bowl blend the dry ingredients and spices (excluding the cheese), and then push the ingredients to the side of the bowl to make a well in the center of the bowl.
  3. Pour the melted butter and milk in the well, and stir in the dry ingredients until you have a loose, partially mixed, crumbly dough.
  4. Add the cubed cheese, and stir a few more times, until the liquid is mostly incorporated.  Turn the dough out onto a well-floured surface and kneed briefly, about 3 times, to bring the dough together.
  5. Roll out to approximately 1" thick and cut out your biscuits.
  6. You could also divide it into 8 or 12 pieces instead of cutting your biscuits out, but they won't raise as much.
  7. Place the biscuits gently on your baking sheet at evenly spaced intervals and bake for 8-10 minutes or until lightly golden brown on top.  Allow to cool on the baking sheet 2-3 minutes before serving.

These biscuits are great for breakfast or as a savory afternoon snack. Try cutting them in half and spreading cream cheese on them for that extra indulgence. They're even better with your own grown fresh cilantro!
