I love coconut, the smell, taste and texture. It amazes me how many different ways it can be used. There is coconut milk, which is coconut water. Coconut oil, flakes unsweetened or sweetened. I use most of that stuff on my body actually. I add two cans of coconut milk, bought at the dollar store, into my bubble bath. It makes your skin feel like silk. I applied coconut oil on my face before, I heard it would do magic…the only magic I got was acne overnight. So don’t do that. I just use it for soothing bug bites, scratches and little wounds. My dog had a tic the other day and I put it on his bump after pulling that gross thing out. It helps better than any soothing cream you buy at the pharmacy. After my recipe, I will include some more helpful facts about coconut oil.
Anyway, I was in the mood to eat coconut so I looked up Pinterest for a nice recipe. I found one for a pie. Normally I’m not a sweet person, but this one looked really appetizing. I changed the recipe a little bit, so I hope you will like it.
Coconut Cream Pie
- 1 cup butter
- 2 cups flour
- ½ cup icing sugar
Coconut Cream Filling
- 3 cups flour
- 3 cups coconut milk
- 4 eggs
- 1 ½ cup white sugar
- 2/3 cup cornstarch
- ½ tsp salt
- 1 ½ cup flaked coconut
- ½ tsp coconut extract
- ½ tsp vanilla extract
- 1 cup cream cheese
- 1 cup coconut milk
- ½ cup icing sugar
- Make shortbread crust. Preheat your oven to 350 Fahrenheit. Prepare a 9 x13 inch baking dish with a foil sling . I use one long sheet across the length of my dish, and two overlapping short sheets across the width of my dish=just arrange it so that it has some overlap and overhang to help you pull the pie out after it is finished. Mix the butter into the flour and icing sugar and press into the pan. Bake 18 minutes or until light brown. Set on a wire rack.
- Make coconut Cream filling. Combine the flour, coconut milk, eggs, sugar, cornstarch and salt in a large saucepan and bring it to boil over medium low heat, whisking constantly its thick and bubbling. This can take anywhere from 15 to 30 minutes. Add coconut and vanilla extracts and the coconut flakes and stir. Pour this filling over your cooled crust, letting it cool for a bit on the counter before sticking the whole thing in the fridge to chill until firm. It takes about 2 to 4 hours.
- Make cream topping. Combine the cream cheese, coconut milk and icing sugar. Whisk everything until smooth. Pour the cream over your pie and gently spread it around. Chill until ready to serve. It takes about 2 more hours. Use the sling to pull the pie out of the dish. Cut with a sharp knife.
I served my pie with grilled pineapple, chocolate flakes and fresh mint.
