Salad

Hardboiled eggs compliment most any salad. Start with lettuce or mixed greens and add your favorite veggies, such as tomatoes, onions, carrots and cucumbers. Slice your hardboiled eggs in half or crumple them and spread them over the mixture. Add other optional toppings, such as quinoa, rice or crunchy noodles. Sprinkle with vinegar and oil or your favorite dressing.
