I did not see this coming. It has been announced that Cauliflower is dethroning Kale as the new Super Food! If you have been following me, you will know my secret weapon is roasting this vegetable for a favorite flavor.  I like this straight out of the oven, sans any cheese, just roasted with some olive oil, garlic salt and pepper. This is a great starter for African Stew (replace the chick peas with cauliflower) that has this white super food as the base.

This roasting is a far cry from the steaming my mother did to this winter vegetable.  I am glad I tried it again!

An article recently got my attention when I discovered some of the superpowers and super numbers behind this veggie. Somehow, this week,  I found myself enjoying rice three times and this is very unusual for me.  The first time, as a new Indian Dish, Khichri, the Indian equivalent  to a Fried Rice. YUM!  Then, it was offered as the vehicle to enjoy some Latin Black Beans (I was able to walk away from this plain rice). But then a neighbor brought me over a bowl of Spanish Paella. I could not resist this last dish either!

Here are some food facts that will get your attention.  A cup of cooked white rice is about 200 calories and 44 grams of carbs.  The same cup but of cauliflower that has been “riced” or shredded in a food processor is a mere 30 calories and 6 grams of carbs! That is a BIG difference.  Yes, there is a slight difference in taste and texture, but the calorie drop cannot be overlooked!

A recipe was shared for Cauliflower Mash that I wanted to post.

This recipe serves 6 people.

Ingredients:

  • 2 pounds of cauliflower, cut into florets
  • 2/3 cup sour cream
  • Sea salt and fresh ground pepper
  • Nutmeg, freshly ground
  • 1 tablespoon salted butter

Directions:

  1. Bring a large pot of salted water to a boil.
  2. Add the cauliflower and cook for about 15 minutes until tender.
  3. Drain in a colander, leave for a few minutes to steam dry.
  4. Blend to a puree in a food processor with the sour cream and seasonings.
  5. You might need to complete this process in batches.
  6. This can be made in advance and gently re-heated.
  7. Transfer to a serving dish finishing with some added nutmeg and a pat of butter.
