Somehow this Holiday has brought out many Retro Recipes. I cannot exactly explain the why but it has been fun going down memory lane on many recipes. Someone asked for a suggestion for a unique side salad for a buffet and I offered the Seven Layer, Broccoli and Caesar Salad options.  I had not thought about a Seven Layer Salad in years.  I remember this at many picnics growing up and then seeing this salad appear on buffets too.  This salad makes a great visual display too!

 

Salad:

1 head Iceberg lettuce, chopped or about 12 – 16 ounces of Assorted Greens, wash and dry this well

8 ounces, fluid baby spinach wash and dry

Salt and pepper, to taste

8 hard-boiled eggs, chopped

1 pound bacon, cooked and then chopped

4 whole tomatoes, chopped

1 cup celery, diced

1 bunch green onions, sliced

8 ounces sharp cheddar cheese, grated

1 bag (10 Ounce) frozen peas, partially thawed

*** Other add in options:  Black olives, Red onions - substituted for the Green Scallions noted above, Water Chestnuts and Red Peppers have also been suggested.

 

For the Dressing:

1 cup Mayonnaise

1 cup Sour Cream

2 tablespoons sugar

Directions:

  1. In a clear glass bowl, or a 9 x 13 x 2 glass pan, layer salad ingredients in the order they appear above, concentrating ingredients around the perimeter of the bowl and filling in the center with lettuce, if needed. End with the layer of peas.
  2. Combine dressing ingredients in a separate bowl and mix well. Pour over the top of the peas and spread to cover, bringing dressing all the way out to the edges of the bowl.
  3. Cover and refrigerate for up to 8 hours.
  4. There is a wild debate to toss or not to toss. I like to dress with about ½ of the dressing and serve the remainder on the side.
  5. I like the presentation when you do not toss, but instead take a “wedge” or square of salad and have all of the layered ingredients.

The presentation of this salad in a footed glass bowl is fabulous.  The 9 x 13 x 2 clear glass pan is very practical for a large covered dish supper.

Here is another serving suggestion.  Layering this Seven Layer Salad in a glass cup or jar.  Dressing each cup or jar.  Somehow individual servings are more and more popular especially for large events.
