This week, I challenged myself to cook a dish using only what I had in my cupboards.? Actually, this is what I do most of the time.? But to find one recipe that I can actually follow and be certain that it’s going to be good is not that easy.? Soup!? There’s always a good soup recipe that you can make without having to go to the grocery store.? This is the main reason I eat soup.? When it’s chilli at night or in the winter, even when spring is not in a hurry to show up… soup always makes a good meal.? We can prepare it in advance and take a bowl here and there in the following days.? I’m talking of course about a normal family.? If my soup can last two days, I’m asking my kids if there was a problem.? Maybe they didn’t like it!?? I made this one in the afternoon, so when they came back from school, hungry like teenagers are, they could have a bowl or two…? And they did!? They probably enjoyed it because by the end of the next day, the pot was empty! I called this one a dish type soup.? One bowl of this and you’re full.? There’s potatoes, fish, grains, peas…? Everything good in one simple bowl. I promise, this is the last soup recipe I’ll give to you, for a while at least. Spring is here to stay now and we’re about to welcome summer soon... so no soup for a while after this. In the summer, we’ll keep it fresh and colorful. For now, for those few chilly nights coming, let’s do this soup!
- 1 cup chopped yellow onions
- 2 cloves garlic, minced
- 1/8 cup olive oil
- 1/2 teaspoon dried oregano
- 1 -1/2 teaspoons salt
- 1 teaspoon freshly ground black pepper
- 2 cups medium-diced potatoes
- 900 g bag Soup Mix (Green and yellow split peas, red split lentils, rice and pearl barley)
- 4 cups water
- 8 cups chicken stock
- 2 cans tuna in oil
- In a 4-quart stockpot on medium heat, saute the onions and garlic with the olive oil, oregano, salt, and pepper until the onions are translucent, 10 to 15 minutes.
- Add the potatoes, chicken stock, water and soup mix. Bring to a boil, then simmer uncovered for 40 minutes or until all the peas are soft.
- Add the two cans of tuna.? Skim off the foam while cooking.
- Stir frequently to keep the solids from burning on the bottom. Taste for salt and pepper.
- Serve hot.
I like to use the Soup mix ever since I discovered it. I always have a bag in the cupboards just in case. After I got a few complaints from my children about my pea soup, I had to do things differently. This is how the Soup Mix bag became a habit. Green and yellow peas, red lentils, rice and pearl barley gave another twist to my soups. Why using only one ingredient when you can have it all in one bag. The price is ridiculous and it’s easy to mix it in with all kinds of vegetables, meat or fish. Just make sure you use enough liquid with it if you want to experiment with some recipes of your own. The Soup Mix cooks pretty fast. Don’t expect to have your soup cooking on your stove for hours. It’s not going to happen. In less than an hour, it’s usually perfectly cooked! Another good reason to try it - you don’t have to plan your dish hours before... a last minute meal can include a soup now!
