Have you ever wondered why Asian cuisine tastes so amazing? We here at Cilantro have. That’s why we took the time to look into the matter further. We found that stunning Asian cuisine is the result of three elements working in perfect harmony with one another. The first two elements involve using high quality ingredients and a flash sear cooking technique. The third element involves selecting the right wok. Without one or the other, the meal may come up short. The good news is that we offer an array of wonderful woks that would be perfect for making jaw-dropping, Asian dishes. Here’s a closer look:
Cast Iron Woks
One of our many favorites is the Lodge Pro Logic 14-inch Cast Iron Wok with a built-in base and Cantonese-style handles. The built-in base and dual handles helps to keep it from flipping over during the flash sear process. We also love the fact that it comes pre-seasoned and features ample searing space. In addition, the cast iron wok is 4 ¼ inches deep. Thus, there is plenty of space to flip ingredients too. Consider pairing the wok with our Trudeau Beachwood Spatula. It features an ergonomic handle and a rounded edge blade that’s ideal for use with the wok’s gracefully, curved edges. Trudeau Beechwood Spatulas typically sell for around $6 each. Prices for our cast iron woks tend to start at $116.
Carbon Steel Woks
Those that prefer Northern-style, wooden handles may prefer a Fox Run Carbon Steel Wok instead. The long handle is cool to the touch, which makes it perfect for times when a hand toss technique is best. Fox Run’s wok is 14-inches in diameter and suitable for preparing a five person meal. However, you’ll want to season it first with an oil that has a high smoke point. Oils that would be suitable for such applications include soybean, peanut and grape seed. Each Fox Run Carbon Steel Wok will generally cost you approximately $32.
Stainless Steel Woks
Are you working with induction heating elements instead of a gas burner? If so, you may want to purchase a stainless steel Cuisinox Covered Wok. Because they are made by Cuisinox, you can expect them to heat up quickly, hold heat evenly and provide an excellent sear. The stainless steel woks range in size from 14-inches to 15-inches. The 14-inch woks come with your choice of Cantonese or Northern-style handles. The Cuisinox Elite 15-inch Covered Wok, on the other hand, comes outfitted with Northern-style handles. It is also important to note that each stainless steel wok features dome shaped lids. The lids are awesome to have when you want to use the wok to steam dumplings or bao. If you do decide to use the wok as a steamer, make sure that you pair it with Helen’s Asian Kitchen Bamboo Steamer. It often sells for $30. Prices for the stainless steel woks start at $152.
